Ingredients for basic quiche (Pasta matta)
250 g flour
140 ml of cold water
4 tablespoons olive oil
1 tablespoon vinegar
1/2 tablespoons salt
Proceeding
Mix all ingredients together to amalgamate them, making a ball.
Put the dough on a flat surface and cover with the bowl, let stand for half an hour.
Roll out the dough on a sheet of parchment paper, using a rolling pin.
Transfer the dough with all the baking paper into a mold, making sure the dough adheres to the edges. Cut off the parchment paper in excess.
Add the filling you prefer: Norma, mushrooms, zucchini or peppers.
Bake for 40 minutes at 180 °C.
